Magnolia Table’s Broccoli Casserole

Magnolia Table’s Broccoli Casserole is a subtle, creamy, cheesy, broccoli-filled side dish that is absolutely wonderful. It’s perfect if you’re looking to step up your weekday sides, and it’s perfect for making an appearance at the Christmas & Thanksgiving buffets.
What’s Special About This Recipe?
Even though, in my opinion, it’s hard to beat oven-roasted veggies, I was starting to get tired of my same-old, same-old (so were my boys and husband). I found this recipe in Magnolia Table’s first cookbook on page 171 called “Souffléed Broccoli Casserole”, and the whole family devoured it asking, “What is this stuff?!” It is more work than simply roasting or steaming broccoli, but if you have the time and mental energy to try something new, it truly is delicious!
I changed a few things to make the recipe feel slightly more doable for a busy weeknight, and also slightly healthier. The original recipe calls for grated onion, for which I’ve subbed onion powder. It also calls for heavy cream, for which I’ve subbed milk. Magnolia’s recipe calls for grated Swiss cheese, for which I’ve subbed shredded cheddar which I usually have more readily on hand. Lastly, I’ve found this recipe not as tasty for leftovers past the first day, so I always half the recipe (the original recipe is made in a 9×13, my recipe is made in an 8×8).
If I was making this for a holiday side dish, I’d make the original recipe! Grated onion, heavy cream, grated Swiss, 9×13 size…because this will all get eaten if there’s a crowd, trust me!
